美食在巴黎

 黎到Paris
為食的我與XX
又點可以唔試米豬蓮餐廳

法國菜是我很喜愛的菜式之一
講明fine dining
at least都要食4粒鐘
不過其實我都好enjoy
因為平日係屋企食餐飯
11R又跳上餐枱
行來行去
所以我地平日都拿拿聲食完
反而食fine dining
真係局住慢慢食
可以傾下計
談下情

今次到Paris逗留4晚
我地都唔蝕底要食2餐
係香港食過
好喜歡佢地嘅分子料理
Paris lee間第一次去
仲好榮幸第2次見到Chef PIERRE GAGNAIRE
第1次見到佢
係佢由法國到HK
今次係我地由HK去法國
世事真係好奇妙

今次個Tasting Menu名叫Summer Menu
每位EUR 280
但只係見到Amuse Bouche
已經覺得物有所值

餐廳在凱旋門咐近
位於Hotel Balzac內


lee d只係Amuse Bouche
又精緻又令
我都唔記得食左咩


 Spring vegetal: vegetables, fruits, young leaves, flowers,
Muscat wine from Beaumes-de-Venise

見到個頭盆
好似睇緊"魔厨"

靚到唔識形容


Lac Leman: fine mousse of pike with savagnin wine,
frogs Poulette; nettle flan, paris mushroom salad
Slice of char veiled with slices of Colonnata lard,
chard ribs with pine kennels

湯好香好濃
田雞肉好嫰滑



 Carabinieros king prawns with Madras curry,, piquillos;
slow-melted grapefruit and celeriac with kitul sap,
grated cauliflower;
browned avocado segments

king prawns好甜美
配埋個sauce好特別


 Creamy sauce of spider crab, large crab's flesh, dog cockles, and sea fennels
Iodine-scented consomme, ewe's milk vlevty soup
一句講哂


Braised chanterelle mushrooms, mousseron mushrooms and octopus flavoured with omiza,
courgette flower with Comte cheese;
rattes potatoes from the Re island served with belotta ham

個名水蛇春咁長
總之就好好味啦


 Seriole fish wrapped in seaweed - fillet of mefiterranean tuna (from Sustainable fishing) ;
red mullet with vadouvan - salt cod tripes
Tiny artichokes - Guernica pepper - semi-salted anchovies
個魚好滑
同其他配料一同入口
真係前所未有嘅感覺


Beef rond de veine half preserved with oregano, roasted duck foie gras ;
sorrel flavoured with mustard Fallot,
butter beans and crispy aubergines
Syrup of bigarreau beetroots

無得頂


 Vic Bilh goat's cheese, clarified infusion of ruhubard and barberry
Tamie cheese Melba toast, seasame paste, mango and green apple
Fourme d' Ambert cheese, Indian cress leaves sprinkled with stevia
剩係cheese都咁多攪作
真係抵番哂

 荷葉仔下面個blue cheese
我竟然KO哂
我本身唔食blue cheese的
但lee個真係好濃好好味

甜品都咁多款
我都唔記得咁多啦

 好開心
大開眼界
真係世界級名厨
除左食材新鮮
可以見到每個dish都極盡心思

的確是一份藝術


同樣位於凱旋門附近

典型法國菜
用料同樣新鮮名貴
做法傳統正宗
當然冇Pierre Gagnaire咁多花神
不過一樣咁好食

意大利雲吞包住blue cheese配wild mushroom

紅衫魚煎得恰到好處
配caramelized onions


Foie Gras好味唔駛講
最特別係果3粒cherries超甜
串住果條雲喱拿條發出嘅香味
令cherries更加入味

就知好好味

睇到嘩嘩聲

因為weekday都好full架

相比下
法國美食的確比英國多
或者啱我地口味多d

真係令我再愛上巴黎
希望不久嘅將來
可以再去吃喝玩樂
